Description
FSE is a facility engaged in preparing food for consumption by the public, such as but not limited to: restaurants, commercial kitchens, caterers, hotels, hospitals, prisons, correctional facilities or care institutions. This also includes bakeries, donut shops and public or private schools. The Fats, Oil and Grease (FOG) Control Program requires Food Service Establishments (FSEs) to obtain Industrial Wastewater Permits, implement Clean Kitchen Best Management Practices (BMPs), obtain construction or remodeling plan approvals, install grease interceptors, store FOG waste for recycling, and remove garbage grinders. Environmental Compliance Inspectors will regularly verify compliance with the FOG Control Program requirements and issue Notices of Violation (NOV) as necessary.
