Description
Fats, oil and grease cause sewage backups and overflows. The FOG Control Program regulates Food Service Establishments (FSEs) to minimize the discharge of FOG into City sewers. The FOG Control Program requires FSEs to obtain Industrial Wastewater Permits, implement Clean Kitchen Best Management Practices (BMPs), obtain plan check approval for construction or remodeling, install grease interceptors, store waste FOG for recycling and remove garbage grinders. Environmental Compliance Inspectors regularly verify compliance with the FOG Ordinance and issue Notices of Violation (NOV) as necessary.
FSEs are facilities engaged in preparing food for consumption by the public, such as restaurants, commercial kitchens, caterers, hotels, schools, hospitals, prisons, correctional facilities or care institutions. This includes bakeries, donut shops and public or private schools.
